			<content:encoded><![CDATA[<p>We are just about one month away from the 2012 <a href="//" target="_blank">Craft Brewers Conference</a> in San Diego, CA!  This years CBC runs from May 2 -5 and will be held again at the San Diego <a href="http://www.towncountry.com/accommodations/index.cfm" target="_blank">Town &amp; Country Resort</a>.  This CBC is a highlight as it is also in conjunction with the <a href="http://www.worldbeercup.org/" target="_blank">World Beer Cup</a> judging and awards.  Winning an award at the WBC is a true pinnacle for any brewer as it&#8217;s on a global scale with over 4,000 beers entered from 57 different countries this year.  I will also have 2 Briess beers  on tap for the CBC (at the welcome reception we sponsor and at the beer station by our booth at the Brew Expo), an Octoberfest brewed at <a href="http://www.karlstrauss.com/index2.html" target="_blank">Karl Strauss Brewing</a> using our new Goldpils Vienna malt and a Black IPA that I&#8217;m brewing at <a href="http://www.pizzaport.com/" target="_blank">Pizza Port</a> San Clemente using our Midnight Wheat malt.  Should be a great time indeed!</p>

			<content:encoded><![CDATA[<p>As a lot of people will be attending New Years Eve parties tonight and counting down the last few moments of 2011 so  I thought I&#8217;d share a picture that I think is quite appropriate for a festive evening.  Brewer (and evidently master artisan) Bill Jenkins of <a href="http://www.elliottbaybrewing.com/beer/">Elliott Bay Brewing Company</a> in Seattle hand-crafted this &#8220;disco <del>ball</del> keg&#8221; by applying what appears to be several million tiny mirrors to a 1/4BBL keg.  This well constructed item might be the most creative use of a keg I&#8217;ve ever seen and this close up picture was taken in front of their 10BBL brewhouse.  Bill had this hanging at EBBC for our <a href="http://www.mbaa.com/Districts/Northwest/MeetingRecaps/2011_11_04FallMtg.htm">District NW MBAA</a> cask fest (click for cask presentations) a few months back and it was a great addition to the brewhouse I&#8217;d say!  I hope everyone has a wonderful New Years Eve and I hope to see you in 2012!</p>

<p>Aren&#8217;t familiar with <a href="http://www.brewingwithbriess.com/Products/SeasonalMalts.htm#Jan" target="_blank">Caracrystal® Wheat Malt</a>? It&#8217;s a different from other caramel wheat malts. It has the caramel sweetness you&#8217;d expect along with  a really nice roasted flavor that made us think of<strong> &#8220;dark toast&#8221;</strong>. Let us know what you brew with it!</p>

			<content:encoded><![CDATA[<p>Recently I had the privilege of doing a collaboration brew with Elan Walsky and Bruce McPhee at <a href="http://coalitionbrewing.com/brewery.php">Coalition Brewing</a> in Portland, Oregon.  We brewed a 100% Briess 10BBL batch of a Cascadian Dark Ale/Black IPA/American-style Dark Ale (or whatever you want to refer to it as this week) on their newish <a href="http://jvnw.com/">JVNW</a> brewhouse.  Like most brewers we got an early start and got mashed in before caffeine.  I&#8217;ll have the brew recipe posted on our <a href="http://brewingwithbriess.com/Create-A-Brew/Default.htm">website</a> but can tell you that we were not shy on the hops as it takes a LOT of them to shine through on this style of beer.  As this CDA made generous use of <a href="http://www.usahops.org/userfiles/file/HGA%20BCI%20Reports/HGA%20Variety%20Manual%20-%20English%20%28updated%20March%202011%29.pdf">Apollo hops</a> the beer was named Apollo Creed and they had Rocky on the big screen punching it out for the tapping party!  The final product had a nice dryness and a nice creamy mouthfeel with only a minor amount of roasted malt flavor from the use of our <a href="http://brewingwithbriess.com/Products/Dark_Roasted_Malts.htm#Midnight">Midnight Wheat</a> malt (550L) which is a great malt to use when you&#8217;re looking for color but none of that acrid/bitter/husky flavors.  Thanks a mil to Elan and Bruce for letting me be a part of a wonderful beer!</p>
