Briess® Black Cocoa Replacer is a whole grain specialty flour developed by Briess to have the same intense black color and flavor characteristics, particle size and nutritional profile of black cocoa. A natural ingredient produced from 100% pure specially roasted barley, Briess® Black Cocoa Replacer mimics the performance of black cocoa powder and, in many foods such as baked goods or extruded products, can be formulated as a 1:1 replacement to black cocoa with no other adjustments.
This innovative, USDA Certified Organic ingredient now makes it possible to produce organic versions of some foods that have been produced only as conventional due to the difficulty of sourcing, or the high cost, of organic black cocoa.
