Uniquely Briess - Maltorose™ Dough Improver
Maltorose™ Dough Improver is a unique dough improver that delivers a consistent level of enzymes plus yeast food and subtle, appealing flavor to yeast fermented dough systems. A natural dough improver, it is a blend of whole grain diastatic specialty Malted Barley Flours and dextrose. The specialty Malted Barley Flours deliver the sublte malty flavor that improves the taste of white breads, pizza crusts and dinner rolls. The product is an off white to cream colored flour that is slightly hygroscopic.
Maltorose™ Dough Improver has a consistent diastatic power of 20, about one-tenth that of standard Malted Barley Flour. The combination of being a standardized dough improver and having low enzymatic activity makes it easier to formulate into yeast fermented dough systems without the possibility of adding too many enzymes that may break down the dough.
Maltorose™ Dough Improver provides uniform and improved fermentation and improves machinability and extensibility. Enzymatic digestion of starch increases fermentation, relaxes the dough, decreases proofing time, increases volume, enhances browning and softens the crumb. It is Kosher Certified and made from non-GMO sourced raw materials for a clean label. Use in small percentages in:
