Benefits of Pregelatinized Flakes: Pregelatinized Flakes have been specially processed to be a reduced cook-time ingredient so they need to soak or pre-cook and can be incorporated directly into the dough. They're perfect for multi-grain applications including breads, crackers, snack foods, etc.
