Benefits of Briess Nondiastatic Malts: Naturally occurring enzymes in malted barley are destroyed when malted barley receives additional drying in order to develop more intense, unique and complex flavors and color. The result is nondiastatic malt ingredients with unique flavors, colors and functions but with no addition of enzymes into the formula.  In addition, the natural malting process preserves the characteristics of the whole grain so nondiastatic malt ingredients are nutritious and healthy:
